i own an Aga stove, and the one requirement for any pot or pan is that it have a thick, flat bottom. Sitram pans do, and I have acquired a number of them over the years. They are sturdily built for commercial use, and I doubt that they will ever wear out. I got this particular pan for braising in my oven; I needed something that would work on top of the stove and fit the ovens (the Aga ovens are long and narrow). My first job was Italian pot roasts; two of them fitted nicely in the pan and, after I had browned everything, popped right into the oven. The result was excellent, and the pan cleaned up easily. i can't recommend Sitram enough, and I only wish that this brand was better known.
